Go Bananas With These Recipies

Bananas are great. But once they start getting dark brown and ugly, it can be tempting to get rid of them.

Don’t throw them away though!

Here’s a list of easy recipes you can make with ripe or overripe bananas!

Cekodok pisang (fried banana balls)

INGREDIENTS:
– 135g plain flour
– 1 teaspoon baking powder
– 1 teaspoon caster sugar
– 1 tablespoon brown sugar
– 1 egg
– 1/2 teaspoon salt
– 300g ripe bananas

INSTRUCTIONS:
1. Sift the flour and baking powder together in a mixing bowl. 
2. Mix in the sugars and salt.
3. In a different bowl, peel bananas and mash them with a fork.
4. Add the egg in and mix well. Then, add all of it into the flour mixture and blend it into a batter.
5. Heat enough oil for deep frying in a wok and put on medium heat.
6. Scoop out the batter with two tablespoons and slip it into the wok.
7. Deep fry in batches until golden brown so it’s not too crowded.
8. Remove the fritters, drain them on a paper towel, and serve!

Pisang goreng (banana fritters)

INGREDIENTS:
– 1 bunch ripe but firm bananas
– Oil for deep frying
– 100g rice flour
– 30g plain flour
– 1 tablespoon sugar
– 1 large egg
– 1/4 teaspoon salt
– 150ml water

INSTRUCTIONS:
1. Combine the rice and plain flour, sugar, salt, and egg and mix in a bowl. Stir in water until it becomes a smooth batter.
2. Peel bananas and slice in halves lengthwise.
3. Heat oil (about 4cm deep) in a wok or saucepan with medium heat.
4. When hot, dip the bananas into the batter and slip them into the pan.
5. Deep-fry until golden brown on both sides.
6. Carefully drain the fritters, place on a paper towel, and serve!

Moist banana bread with chocolate chips

INGREDIENTS:
– 1 ripe banana 
– 1 tablespoon milk
– 50g (2oz) soft butter
– 75g (3oz) plain flour
– 75g (3oz) caster sugar
– 1/2 teaspoon bicarbonate of soda
– 1/2 teaspoon baking powder
– 1 large egg
– 50g (2oz) dark chocolate chips

INSTRUCTIONS:
1. Preheat oven at 320ºF or 160ºC.
2. Put bananas into a mixing bowl and mash them with a fork.
3. Add the butter, sugar, flour, bicarbonate of soda, baking powder, and milk to the mix.
4. Crack the egg in and mix with an electric whisk until it becomes a smooth batter.
5. Add chocolate chips and fold in with a wooden spoon. You can also add toasted pecan or walnuts if you’d like.
6. Pour the mixture into your greased baking tin.
7. Put in an oven to bake for 40 to 45 minutes minutes.
8. Once it’s done, take it out and let it cool before serving!

Banana pancakes

INGREDIENTS:
– 350g self-raising flour
– 1 teaspoon baking powder
– Pinch of salt
– 2 eggs
– 2 very ripe bananas
-1 teaspoon vanilla extract
– 250ml milk
– Butter

INSTRUCTIONS:
1. Sieve the flour, baking powder, and a pinch of salt into a bowl.
2. Mash the ripe bananas with a fork in a different bowl until smooth. Then, whisk in the eggs, vanilla extract, and milk.
3. Make a well in the dry mixture and stir in the wet ingredients.
4. Whisk it all together to make a smooth batter.
5. Heat some butter in a medium heat pan.
6. Add two to three tablespoons of batter into the pan and cook until small bubbles begin to appear.
7. After one to two minutes, flip the pancake over and remove when golden brown. Repeat with the remaining batter.
8. Serve with maple syrup, honey, or fruits!

Banana ice cream (without an ice cream maker)

INGREDIENTS:
Frozen bananas

INSTRUCTIONS:
1. Freeze peeled bananas.
2. After frozen, chop them up and blend them in a blender or food processor until smooth and creamy – it should resemble a soft-serve texture
3. Optionally, you can add cinnamon, honey, or fruits and serve!
